Healthy and Easy 4-Ingredient No-Bake Pumpkin Bars

If the scent of pumpkin spice isn’t wafting through your house...is it even fall? If your answer is a hard no, we’ve got just the recipe for you. These yummy pumpkin bars are perfect for those early fall days when you want the feeling of baking, without the heat from cranking up the oven. Plus they take less than 10 minutes to make and only 30 minutes to cool. 

Mix these babies up for a post-workout snack or party treat and breathe in the smell of fall.

What You’ll Need:
15 oz pumpkin puree
1 cup coconut flour
¼ cup coconut palm sugar
Cinnamon to taste

Directions:
1. Mix flour and sugar together in a medium to large bowl
2. Add in pumpkin puree, mix
3. Pour mix into glass dish and sprinkle with cinnamon to taste
4. Refrigerate for 30 minutes, cut and enjoy!

Serve at room temp or straight from the fridge.

Mindy! I did a quick Google search and discovered that plantain flour is very similar to coconut flour in terms of density, etc.

Almond flour would work, or normal flour, not you would need to increase the amount of flour by quite a bit.
