National Cookie Day: Easy 3-Ingredient Cookie Recipes

It’s the best time of the year, so naturally, cookies are making some pretty major appearances as of late. In honor of the season and National Cookie Day, we pulled together some super easy and healthy-ish 3-ingredient recipes you can whip up in a jiffy. Plus, we’ve got your gluten-free and vegan friends covered.

That holiday potluck you have to go to? Girl, we got you!

3-Ingredient Peanut Butter Cookies (vegan, gluten-free possible)
from The Conscious Plant Kitchen

Ingredients: (makes 8-12 cookies)
1 cup salted peanut butter
¾ cup oat flour (if you’re avoiding gluten, look for a gluten-free option)
¼ cup maple syrup

Directions:
Preheat oven to 350℉
Mix ingredients together in a bowl
Separate into 8-12 doughballs
Bake for 12-16 minutes

3-Ingredient Oatmeal Banana Cookies

Ingredients: (makes 12 cookies)
4 large ripe bananas
2 cups rolled oats (gluten free)
⅔ cup dark chocolate (most options are vegan, but double check the label)

Directions:
Preheat oven to 350℉
Line baking sheet with parchment paper
Use electric mixer to crumble oats (do not overmix into flour)
Pour all ingredients in a bowl and mix
Spoon 12 cookies onto baking sheet
Bake for 12-15 minutes or until golden brown

3-Ingredient Nutella Cookies

Ingredients: (makes 20 cookies)
1 cup all-purpose flour
1 cup Nutella
1 large egg

Directions:
Preheat oven to 350℉
Line baking sheet with parchment paper
Pour all ingredients into a bowl and mix with electric mixer (mixture should be thick)
Separate into 2 tbsp-sized cookies balls and place on baking sheet
Use fingertips to flatten cookies
Bake for 7 minutes or until cooked around the edges
Let cool
