Pumpkin Spice Breakfast Recipe- Guest Series Continued

This next PSL swap is unique. Maggie Susac of Fit Meets Fab shares one of her favorite breakfast meals. Some of us don’t do well with grains. If you follow a Paleo diet or have participated in the Whole30, you may or may not have realized that grains don’t sit well with your gut. If you fall into any of these groups, this recipe is for you! Behold, a creation Maggie is calling (drum roll please)… “Noatmeal.” A grain-free, warm breakfast cereal that is packed with protein and is sure to leave you full and satisfied all morning long!
 
 
Pumpkin Spice Noatmeal
Ingredients:
¼ cup almond milk
¼ water
1 pinch of cinnamon, nutmeg and pumpkin spice
2 pasture raised eggs***
¼ banana mashed
1 pitted date
¼ cup organic pumpkin puree
*optional superfood additions
½ tsp maca powder
½ tsp lucuma powder
 
Directions: Bring liquid and spices to a boil. Turn down to medium heat and crack two eggs in the liquid, whisking constantly. Once the mixture begins to thicken, add the mashed banana, date, and pumpkin puree, continue stirring. Once combined, add the maca and lucuma powders. Remove from heat and pour into a bowl. Top your noatmeal with your favorite healthy fats. We like pumpkin & chia seeds, nut butter and raw cashews & walnuts!
 
*** If you like oatmeal by all means please swap the eggs in this recipes for ¼- ½ cup of oats.
